And Neopolitan Pizza is cooked at 800+ to 1,000+ degrees in some cases depending on the oven and cook and hydration of the dough. It sounds insane and it is and well yeah not just any idiot like you can do it, it takes skill, talent and patience and to do it right learning from actual Italians and actual folks from Italy and Naples.


This is why Italians thought I was one of them because not a lot actually know how to do it or can and yeah my nickname was Vento/Ferro or Wind/Iron 😂
Seems like you’re making it out to be a bigger deal than it is. 1,000 degrees? Seems a touch hot, but sure. It’s clearly not a restaurant quality oven, but I have a nice multi-fuel Ooni and generally cook with a roughly 600 degree deck temp and a roughly 750+ degree hood temp. Super hot is not special or an “Italian” thing. It’s kind of how pizza ovens work 🤷

A Spatula is the proper tool for this and I even went extra and used a knife to cut slits and no one does that really. This way the flavors convex even more.

Its hard to do because the oven is again hot as shit at 900-1000+ degrees so you have to cook it near the mouth g the oven. This shit isn't a microwave or a state of the art oven. Its the old way with wood and it's hard but it's worth it and it's the best way.

It honestly just depends on the style and hydration of doughs. Typically American style and American doughs are low hydration like 60% or 55% or lower sometimes. So you can't cook that in a 1000 degrees or else it would burn or it would be hard as hell to cook.


Neopolitan Pizza allows for this given the 65+ hydration levels in water to flour ratios.

For what you are portraying as some high class authentic Italian pizza restaurant that looks pretty meh. And cooking a pizza isn't really the rocket surgery you're trying to make it out to be. Honestly unless you doing some specialty high class cuisine most cooking isn't really that difficult. You can stop pretending you're a world class Pizzaiolo
