What makes some amps sound polished/polite?

Those 500pf snubbers are horrible. To my ears it makes the amps top end artificial and weird. You know who uses them ??

Yeah. Also that large plate resistor (330K) we see on many marshal mod style amps can produce a lot of nasty high frequency content. So we usually see a cap beading this off somewhere in the circuit, not just on Friedman amps. But for sure Friedman went all out on it, LOL.

Like others have stated, I have seen him scale back on those caps as years pass.

I agree. Like I play stuff like Interpol, the Cure etc and find that polished amps keep me from adding pedals. But when I'm playing punk or metal I like a raw sound
