I just transferred my amps to a wire shelf setup but the cables are a bit of a mess. Anybody have items they like for keeping things tidy in this regard?

Go to Dollar Tree and get a pack of zip ties.

I prefer to use velcro ties. Easy to change and rearrange when you need them. I also use them for wrapping cables up when I'm not playing.
