Last weekend of summer. I’ve seriously slacked with poolside food this year. Hell, I’ve only burned through 3tanks of propane 🤦. Fewer visitors (everyone is busy…) and I haven’t ventured past hamburgers, hotdogs, brats, etc. I’d like to do something “big” but it’s going to be 98 again tomorrow and no one wants to eat a big meal with in temps…

I'm leaving for the cabin with a friend an Q'n up chicken thighs and shrimp again but yeah....
 
I've been pan searing and foregoing coals/smoker/BBQCucker high temp sears due to the dog days of summer being like 101º and all...ready for fall!
 
Anyone cooking this weekend?
We are having a simple cookout- burgers, dogs, potato salad and shrimp cocktail. Strawberry/blueberry shortcake for dessert.
I usually go apeshit with the food- steak, duck, lamb etc. but just going real simple this time. It will be a small crowd of 6 people.

Not really, threw some dogs on the grill today and will likely do the same tomorrow. Last pool day of summer 😑.

I HATE winter, but I’m in a rut with “summer” recipes. I don’t want to wish it away, but I’m ready to crank on some pot roasts, (award winning) chicken and noodles, soups, Ooni pizza oven, etc.
 
Not doing anything spectacular this holiday weekend. My wife's work is putting on a conference starting monday afternoon that we'll be attending most of the week. There'll be enough food there where we don't need leftovers sitting in the fridge.

However I'm baking some nice size catfish fillets tonight.
 
I am gonna cook some shrimp and probably do a scratch key lime pie, since everyone around here are complete disasters and cannot properly make a key lime pie.

We’ve decided that we’re going to sell the “pool house” in favor of the Mrs. home. I spent ~$700 earlier this week to stock up on pool chemicals for next season. We’ll have one more year to relax in the water. It’s nice to make a decision, but mixed emotions… my parents had that house built, I came home to that house when I was born and bought it from the estate when my mom died. Sounds sappy and stupid, but I take a little longer to look around each time we’re there… 🤷

I’ve cooked prime rib roasts many times - and they’re delicious. But, I always push back from the table wishing I had just carved and cooked ribeye steaks. Plus, I have some family members that don’t understand a piece of Prime Rib is SUPPOSED to be pink in the middle (🙄). It’s a drag when you spend hours prepping and cooking only to have someone ask you to put their Prime Rib back on the stove to “get it done”…
 
So Sat night I bbq'd shrimp and chicken thighs at my cabin on the Weber. Also skewered up some red pepper, red onion, etc. So with some mashed potatoes and corn that night, I had enough leftovers to carry us through the weekend. Tortilla soup I call it. Basically add the leftovers from the night before into a pot with some black beans, cumin and more spices, salt, salsa, and boil it. Then simmer and stir... Repeat. Eat.

BTW - this is a great winter recipe too because it is easier to keep a big boiling pot of stuff warm, vs the grill.
