No, it shouldn't have more gain as a result and it does look like you install them correctly.
Maybe we can install a 1meg resistor in series with the one wire mod.
This is done by installing a 1meg resistor to the center lug of Vol-2 and the other end to the "one wire" running to the input resistors.

I'm trying to see what effect lowering the gain a bit will have with the volume control problem squealing noise.
I'm also guessing the V1 cathode cap 330uF could be causing us some trouble. I've found over the years different brand cathode capacitors can cause some of the things you're describing. I've never had a problem using Sprague Atom Electrolytics in V1.
If this doesn't work we might have to try putting the filtering back the way it was and try a different approach. If those new filter caps are bad, it will cause the problem you're describing.
I'd look for bad grounds as well, specially along the potentiometers.
Have you tried a different input preamp tube in 1V?
