Real amps are not tied to one guitar to sound good.There is actually something i just realized that may be a bit offtopic, but may be relevant. When i make presets, because the EQ is essentially fixed, when i play with a different guitar, it sounds bad.
I wonder if this is some of what is happening when one person tries another's preset

True. Drywall was the biggest pain of it once you've framed the room out. I never want to try and overlap seams and sand drywall again lolI have worked in construction for 20+ years. While I know how to do it really well, laziness prevents me from doing it. Lol. It would take me a few days, but it would be a pain in the ass.

Yep and it likely wont yield much in quieting down your amps for the effort. If you have the room and can build staggered studs, you can throw on 2 layers of 5/8" drywall that would be separated from the exterior walls and reduce sound transmission. For the ceilings you could either do those isolation clips or drop the ceiling on the new frame and then do another layer or 2 of 5/8". A good solid core door with some weather stripping and you'll have a pretty solid room. Fair enough. There seems to be some disagreement how good the EQ is. Since I don't have one I'll defer to those who do.The NAM captures sound and behave almost identically to real amps.
For example, take your favorite tube amp, load it down, and take the line level to an audio interface and run it into an IR and then out to headphones or monitors.
Now you tweak your gain and EQ controls to where they sound good with that guitar that you've got plugged in. Now, go and grab another guitar which I'm assuming will have different pickups and is made of different materials. It may now sound drastically different from the original setup guitar. Les Paul's with PAFs are way brighter than a super Strat with a JB or a Super Distortion.
You can make EQ and gain adjustments on the NAM profile but it's kinda like using the EQ on the channel strip of a mixer, it's not like turning the amp knobs.
