Where are the good 7 stringers?

I'd either go Carvin or Gutierrez . That way you can get exactly what you want (barring pickups on the Carvin).
 
If you can find a used Brian Moore Custom shop C557 or C907, I've seen them sell for between $1-1.5k. Brian Moore's don't have a lot re-sale value but without a doubt some of the best guitars ever made.
